Banana Muffins
My daughter could eat muffins for breakfast every morning! This seems to be our favorite banana muffin recipe that we have found. I reduced the sugar and salt from the original recipe. Hope you try it and enjoy!
BANANA MUFFINS
INGREDIENTS:
1 1/2 cups all-purpose flour 3 large bananas, mashed
1 teaspoon baking powder 1/2 cup sugar
1 teaspoon baking soda 1 egg
1/4 teaspoon salt 1/3 cup butter, melted
DIRECTIONS:
1. Preheat oven to 350 degrees F. Coat muffin pans with non-stick
spray. Sift together the flour, baking powder, baking soda,
and salt; set aside.
2. Combine bananas, sugar, egg, and melted butter in a large bowl.
Fold in flour mixture, and mix until smooth. Scoop into muffin
pans.
3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes,
and large muffins for 25 to 30 minutes.
Yummy! I love to bake banana bread but have not tried muffins. My kids would love these and they are so great for a breakfast before school.

You know, I could eat banana muffins every morning, too! Those look delicious. And I'm with you-a cup of sugar isn't necessary with bananas. Hope you are all enjoying these nice, cool mornings!
